In FreeBSD, you'll see an entry for the hostname in /etc/rc.conf, so you can just edit that. I'm not sure if there is a more user-friendly way in PCBSD to do it. Ditto for changing from DHCP to a fixed IP. Again, check out the PCBSD faq:
